Chicken in Pandan Leaves

Little bundles of marinated chicken wrapped in pandan leaves and deep fried are very popular as an hors d'oeuvre but I have found it easier, less oily and just as delicious if the bundles are grilled or barbecued.

500 g/1 lb chicken thigh fillets
1 tablespoon Thai pepper-coriander paste
1 teaspoon finely grated fresh ginger
1 tablespoon finely chopped shallot
2 tablespoons fish sauce
2 tablespoons coconut milk
1 teaspoon palm sugar or brown sugar
pandan leaves, fresh or frozen

Trim any visible fat from chicken, and cut meat into bite-sized pieces. Combine the remaining ingredients in a bowl, add the chicken and mix well. Leave to marinate for 30 minutes. Put 2 pieces of chicken on each strip of pandan leaf, cut long enough to allow the chicken to be wrapped in it. Fasten with toothpicks. When all are made, place about 15 cm (6 in) from source of heat and cook over barbecue or under a preheated griller for about 8 minutes, turning after 4 minutes.

Let guests unwrap them and enjoy the aroma and flavour.

Ayam Panggang

8 chicken pieces
1 tablespoon dried coriander
1/2 teaspoon black pepper
2 teaspoons gingerroot, finely grated
1 tablespoon light soya sauce
2 tablespoons honey
2 teaspoons salt
1 tablespoon olive oil

Rinse chicken pieces (or fillet) and pat dry with kitchen towel. If using chicken pieces, slit on sides for easier cooking.Mix ginger, soy sauce, honey, oil and salt in small bowl. Pour this over chicken together with spices and marinate for at least an hour. Grill chicken under preheated grill or roast in oven set at 190C for 30 min, turning chicken over halfway through the cooking time.
